Re:Grilled Okra with Smoked Paprika-Shallot Dip

This dip is out of this world. I used half smoked paprika and half hot Hungarian paprika and it was so good! Spicy, smoky and creamy with a bit of tartness from the onion and lemon juice. Don't skip the cilantro, either. SO GOOD! It paired really well with the okra but I can see this slathered on a hamburger, too. Yum.

Re:Roasted Eggplant and Tomatoes with Tangy Cucumbers and Yogurt

Excellent dish! Made it twice (just now for the second time) and the flavors go so well together. I usually get golden cherry tomatoes and they look so beautiful. Also, both times I have subbed pistachios (I have a big bag of them) for the pine nuts. I serve it all with a thick slice of buttered whole grain artisan bread and it's great! Never miss the meat.
