What more to add? Superb recipe.I saved a little hands on time by tossing the potatoes with olive oil and roasting them in a single layer on a baking sheet lined with parchment - Doesn't change the total time, but just means you can be doing something else (like making the bchamel) while the potatoes roast. I have made this several times, always to rave reviews . . . I do use half lamb half beef though - as I really love the flavour of lamb.

Re:Buttermilk Panna Cotta with Honey Caramel Sauce

Made this just as directed, once with the cherry sauce and once with the blueberry sauce from the original FC article. My sister who is a panna cotta fanatic rated this the best she has ever had. EVER! and demanded the recipe!!! I have made it 3 x (once using the adapted FC recipe with coconut milk for a non-dairy version) and my sister has also made it at least once - always a success, though the coconut milk version was somewhat softer.

Re:Tomato-Basil Tart with Yogurt Custard

wonderful recipe. Just 4 stars because I had to cook the tomatoes at least 10 minutes longer without the lid, in order to evaporate most of the liquid - but other than that, it is a keeper. And by cooking the tomatoes down more, the crust did not get soggy (despite the fact that I forgot to remove the outer ring of the pan, and that I just let it cool on the counter instead of on a rack). I really loved the flavour of the crust, with the added cheese and basil

Re:Rustic Chicken with Mushrooms & Gruyère Polenta

Superb recipe! I made it for a large crowd of 25, using chicken thighs and drumsticks, and got rave reviews. I rarely make soft polenta, preferring to make it ahead, cut in slices and brown it, but this was a delicious change

Re:Onion Marmalade

Great recipe, and simple to make. I have used it also on sliders for a reception I catered, and guests were asking to buy this marmalade from me . . .

Re:Eggplant Parmigiana Rolls with Pine Nuts and Baby Arugula

I love this recipe - I've used it several times as a cocktail canap making small rolls using just single strips of the zucchini, and as a vegetable side with the three strips, and as a main course by layering breaded zucchini with the eggplant filling as another reviewer suggested - each time I've had rave reviews. The tomato sauce/stuffing is so flavourful that I use it for other purposes as well. I have found the zucchini is easier to roll if you microwave it til soft & pliable, rather than salting it -
