Re:Fennel & Rosemary Beef Tenderloin with Creamy Mustard Sauce

I made this lastnight for our Valentine's dinner and it turned out excellent! I bought a 2lb beef tenderloin and cooked it at 375 as the recipe states but it took about 90 minutes to cook. I like my meat medium rare but found cooking to the temperature of 127F to be way to rare. I cooked it to 145F and it was still medium rare. I'm thinking next time I'll cook it at 475F as I've noticed alot of recipes recommend instead of 375F. Overall it was simple to prepare and had a great flavor. The mustard sauce was a perfect tangy match!

I made this last night for Valentine's Day and it was excellent! I followed the recipe exactly and it was the perfect portion size for two. It was simple to prepare and I loved the fact I could make it in advance. I will definately make this again soon when I need a chocolate fix!

Re:Red Velvet Cake

I made this for an Olympic party and drew the olympic rings on the top & shaped strawberries into our Canadian Maple leaf and it wowed the crowd!I find most red velvet cake recipes to be quite bland but this one had a great flavor. I only had one of those tear drop shaped food coloring bottles on hand (maybe 1 tbsp) and the color was fine. I think 3 TBSP might be a bit much. The cake was moist & delicious. A bit fussy to make but definately worth the effort!

Loved the simplicity of this dish! Quick, easy & very flavourful! I lined my baking sheet with tin foil & set the bacon on a rack that I sprayed with non stick cooking spray for easy cleanup. Be careful though if your syrup drips on the foil because t will smoke!
