Re:Beef & Black Bean Chili with Chipotle & Avocado

This was really good chili, although I will cut the onion down by about half next time. Liked the contrast with the avocado.

Re:Individual Beef Wellingtons with Mushroom, Spinach & Blue Cheese Filling

I've made this 3 times. Excellent. Only drawback is that you do need a full day to get this finished. Wonderful result. Once they are in the freezer, they are so foolproof and delicious.

Re:Chicken Marsala with Pancetta & Cream

Easy! Adding peas would be great! I served them on the side and will add to sauce at the end the next time I make this dish. No salt needed on chicken if you are using pancetta-- there is plenty of salt there. Overall this is now a staple in my rotation!

Re:Chicken Salad Milanese

Easy and tasty weeknight meal. Done in less than 45 start to finish. Served it with garlic bread to round the meal out. I will try the parmigiano-reggiano next time. My picky husband loved it!
