Re:Gingery Cranberry-Pear Tartlets

I made these tarts for Thanksgiving. They were beautiful and easy to make. Four teaspoons of cyrstallized ginger gives these tarts a very strong ginger flaor, so use less if you are not a big fan of ginger. They were refreshing after a big meal and the tart dough was very easy to work with.

Re:Tiny Twice-Baked Potatoes

I made these for a Christmas Day appetizer. Easy to make. I used a demi-tasse spoon to hollow out the potatoes and it worked just fine. Very tasty and filling hot appetizer. Prepared them the night before, let them sit on the counter for 30 min, then baked. Would definately make again.
