Re:Pan-Seared Sea Scallops with Cauliflower Purée and Fried Capers

Double the cauliflower. No need to bake after steaming, just dry well. I didn't have fresh thyme, so used dried. Fresh would be better for sure. My husband licked his plate. 3 scallops for me, 4 for my husband, and that's what I'll do for guests, too.

Re:Sear-Roasted Beef Tenderloin with Cognac-Peppercorn Cream Sauce

Huge hit with my family and guests at a Christmas Day dinner. I have a hot oven, so unless you want overdone tenderloin, start checking it early! Mine took half the time. The sauce was so scrumptious. Had leftover sauce, and it was great a couple of days later as well.

Re:Strawberry Crisp

My dinner guests slurped this up. The hardest part about this is cutting up the strawberries and bread for crumbs. Delicious. Love the touch of lemon, too.

Re:Chicken Soup with Barley, Mushrooms, and Greens

Very delicious. Subbed green beans for chard and dried mushrooms for fresh because that's what I had. The sherry vinegar and Parmesan add so much balance to the flavors.
