Re:Crispy Smashed Roasted Potato Recipe

Kudos once again to Susie Middleton for this. Served them with meatloaf - my family loved them. I even had to cheat due to time restriction - cooked alongside meat in 350 convection setting, then crisped a bit more with broiler. Delicious!

I have to agree with the previous reviewer. I thought the problem with the base was the Canadian flour. Next time I would use either less flour or more butter. The taste however was terrific & one guest couldn't stop eating them...I'll try them again & report back.

This worked beautifully - my husband didn't even wait for the whipped cream - don't understand the problem with the pan size, I have an old aluminum pan 8x8 and it worked perfectly. Tks FC & Ms Pugliese - it's delicious & will make again.

Am I missing something here? I weighed the flours but these muffins came out much too moist, as if there was not enough flour - they were very good but looked terrible. Maybe because I used frozen blueberries - I'll try them again and measure with cups & add flour to frozen blueberries.

I have made french crepes over the years but this is the best recipe & method yet. The ease of handling is remarkable. Definitely a keeper and tks to FC for bringing excellence to our kitchens. A Montreal cook.

Wow, this was a delicious version of crme brle! The custard was sooo silky; and the instructions were very clear & easy to follow. Doubled the recipe & have orders for Canadian Thanksgiving, so will have to triple the recipe - my son said it was better than Delmonico's - tks Fine Cooking for excellence in instructions for the home cook...Merci!
