This is A-MA-ZING. Quite possibly rivals Pad Thai as the perfect food combination of sweet, salty, tangy, soft and yielding! It is only missing the crunch factor to go head-to-head but the flavors are just fabulous. Kudos!My advice is don't fiddle with the recipe until you've tried it exactly as written--it can't be improved upon and if you think you can before you try it,you're really missing out!

Re:Carrot and Leek Soup with Herbed Croutons

Not so impressed with this one, though it was easy enough. The soup was very carroty before the yogurt and after the yogurt, it just knocked out the carrot flavor. In fact it seemed to knock out any flavor at all. I ended up adding some curry powder to give it a little life.

Re:Garlic Chicken with a Potato Chip-Basil Crust

This is a big win with the kids, even in the days when basil and mustard would have sent them running from the room. Now this is a requested dish from them. Also, it is very easy to overcook the chicken so I use an instant read thermometer to keep an eye on things and even take some out earlier than others if there is a noticeable size difference in the chicken breasts.
