Re:Poblanos Stuffed with Cheddar and Chicken

Have made this numerous time and we loved it here at home...Tried them out for my new client, one is 1st generation Mexican American, and it brought here back home to LA in her Mom's kitchen, a few medications of turning up the heat with jalapeo, poached chicken thighs, fire roasted corn & tomatoes, great reviews from the client and my own family! Recipe is great as it stands for those who want to try as written!

Taught this raviolo the other evening...used a different approach. Made 5" round disc first, then proceeded with the recipe. Used my own pasta dough recipe...was a winner by all 9 who attended the "Pasta Night"

Re:North Indian Chicken Curry

Just got home from cooking this recipe for a client and can I tell you how good this is!!! I have had the great honor of taking classes at Suneeta's home with other chefs from across the country....guess what I am making for dinner tomorrow night....used boneless skinless chicken thighs since dear client doesn't like food with bones, added chick peas, and used fat free greek yogurt. Yummy and still healthy enough to enjoy without the guilt!!

This is one of those, I could use this with almost any fish! I have done this with Sea Bass for clients, family and friends, always a hit and a go to when you are crunched for time. Reduced the butter to 2 tablespoons with great results...

Re:Sear-Roasted Halibut with Tomato & Capers

Loved this recipe, first tested as written, made it again, change out the Halibut for Mahi-Mahi, removed the flour and sear-roasted per instructions. This is going on my menu rotation for my clients and personal use!!

Re:Red Curry with Shrimp & Sugar Snap Peas

I cannot believe that no one has rated this recipe as of yet!I decided to test this recipe out for my clients Tuesday service. Wonderful as written! My husband could not stop making the usual "this is terrific" comments, that my son's said "enough, just eat!"I will be making a few adjustments for the client, light coconut milk, and bit less oil, trying to keep it in the 500 calorie area including serving with brown rice.

Re:Sear-Roasted Salmon Fillets with Lemon-Rosemary Butter Sauce

In the May publication, the master sear/roast & sauce piece, explained the standard technique and this is just one of the fabulous recipes that have come from that article. I have incorporated this recipe into my personal chef business that seems to always impress. The one thing that I have changed is to use a hard anodized non stick pan which still will develop that golden crust onto the salmon, then onto building your pan sauce with great success. Although it is simply and straight forward to make, the end results are anything but just simply!
