Re:Chicken Pot Pie with Phyllo Crust

I thought this was a pretty good substitute for really high fat chicken pot pie. I've made it a couple of times and have substituted carrots for green beans and shallots for leeks. I could see throwing in some mushrooms sometimes and making a beef pot pie as well. I think it's a good basic recipe that allows you have a fattening favorite in a healthy way.

Re:Pea & Shrimp Penne with Basil

This recipe is great. I didn't have any peas so I used fresh asparagus. It seems that with so few ingredients it would be bland, but it was very flavorful. Even my picky eater husband liked it.

Re:Fresh Cherry Relish and Goat Cheese Crostini

These were really yummy and a fairly healthy appetizer. They were a hit at my dinner party last week. Tonight I took the suggestion of adding the relish to some couscous. I added some walnuts, a tablespoon of oil, balsamic vinegar instead of wine, and some cumin and coriander. It was very tasty.

Very good...I like spicy food but this was almost too spicy for me. Next time I think I'll use a chile and a half rather than two. My picky husband even liked it.

Re:Outrageous Coconut-Cream Meringue Cake

Mixed reviews on this one. The filling was decadent..yum. My meringue was a total flop. I used egg whites out of a carton and next time I think I'll use regular egg whites. Made this for Easter dinner and nobody seemed impressed, but I took the leftovers to work the next day and people went crazy over it. I think you have to like very rich cakes to enjoy this one.
