Re:Pork Tenderloin with Pears and Cider

The sauce was very tasty but the pears did nothing for it. Just were very soft and not much taste. Might use apples next time. I used a lot more cream than it asked for and also had to add some corn starch to get the sauce to thicken. I used apple juice not cider.

I had my doubts while cooking this but it turned out to be fabulous. It does take a lot more broth than called for. I used about half the bacon grease. 3 cups of squash and next time I might add a little more. 1/2 cup of shallots and only 1/4 cup of cheese. I also roasted the squash tossed with a little olive oil at 400 for 20 minutes and added it when almost half way through the rice cooking time. A really great recipe.

I made this as close to the recipe as possible except I used more garlic and canned tomatoes that were drained. I had to use some corn starch to thicken it at the end or it would have been really watery. The flavor was just not there and frying the chicken made such a mess even with a splatter screen that it is just not worth the effort. Was hoping it was going to be a really great new recipe to serve over polenta but it was not. Won't make it again.

This recipe was tastless. I took one persons advice and did not add all of the liquid or it would have been a soupy mess. The only thing that might save it is to add twice the parmesean.
