Re:Smoked Turkey Reubens

Awesome sandwich! Even the hubs liked it. He won't even try a regular reuben due to the sauerkraut. I liked the slaw mix combined with the sun-dried tomato/mayo. I used light mayo, but otherwise stayed with the written recipe.

Re:Blueberry-Lemon Galette

Can't beat a quick, easy recipe! The crust comes together in minutes and tastes SO good!! I made the crust, tossed it in the fridge, and continued with dinner prep. I threw in some blackberries but had to sub lime zest since I didn't have any lemons. It was a great sub! Once dinner came out of the oven, I filled the pastry, put it in the oven and it was finished by the time we wanted dessert.

Re:Spicy Cauliflower Curry

Ok, 5 stars with the extra pepper! I read the other 2 reviews and went with an extra kick since I know I like it. I halved the recipe but used a large jalepeno, seeds and all. I served it over bamboo rice and had a serving left over (and I had a generous serving!) The flavors were very nicely married but be sure to use FRESH curry powder (always use fresher dried herbs anyway, you will be amazed!) I love Penzy's spices !! I made this for my daughter and myself, but I know my hubby would like this one.

Re:Pork Fajitas with Pan-Roasted Corn and Pineapple Salsa

Made this exactly at written....with frozen corn and frozen pineapple. It's costco frozen stuff, so I have no problems saying that stuff rocks. These fajita's are great! The ONLY reason I am giving them 4 stars instead of 5 is because my favorite pork "taco" item comes from Cook's illustrated. Pork tacos with mango salsa. Both recipes are very close. In fact, I think next time (because making your own ground pork so you can control quality is a PITA), I will use this pork recipe with the mango salsa. As I type this, I think I will actually use this salsa recipe, since it is VERY similar, but add MANGO too. Best of both worlds...lean flavorful pork and fruity salsa. THAT would be 5 stars IMO!!

Re:Slow-Cooked Ropa Vieja

I would give this recipe 5 stars if it had a bit more "punch" of flavor. I don't know if it needed stronger/more olives, more vinegar or more cumin. However it was easy to assemble and did taste very good. I followed it exactly except I cut it in half, used a 1.5# flank steak and cooked in a 4qt crockpot. It was done in the 8 hrs, shredded perfectly and kept warm nicely while I cooked the rice. I will certainly make it again! We have smaller appetites, and as a meal alone, the halved recipe fed the 3 of us with at least 2 servings left.

Re:Curried Lentil Soup

I LOVE soups! I especially love them when they are fast to make and good for you, and, butter makes it better ;) This lentil soup has a nice LITTLE kick of flavor from my curry powder. Combined with the fennel it's a great flavor changer from regular lentil soup. I make and freeze individual soup portions for work and this one is definitely on my rotation now!

Re:Farro and Beluga Lentil Pilaf with Ginger and Cilantro

Great pilaf! The farro has a nice chew and the lentils a subtle "pop". The flavors blend together very nicely and even my husband liked it. The only thing I will personally do different next time is leave out the sugar as the onions caramelized enough to sweeten it plenty. I made it almost exactly but subbed stevia for the sugar, and only at half. OH! Note the servings. This make a huge bowl of pilaf. I have enough to chow on for weeks. Guess I see how some of it freezes.

Re:Shanghai Stir-Fried Beef & Broccoli

This was a great, simple dinner! I paired with brown rice and followed the recipe exactly, EXCEPT...don't you hate it people say that.... I added a 1/2 cup cashews at the end. The flavor was very well blended and the amount of pepper flakes was perfect. I would have used a little more for myself, but but my pepper-phobic husband told me it was "just right".
