Re:Burgers with Sun-Dried-Tomato Mayo and Arugula

These were really easy "indoor" burgers. I made them as sliders with sliders pretzel buns. The only thing I will change next time is to broil the burgers over a wire rack. The grill pan was full of juice and fat. The mayo was delish!

Re:Broiled Steak & Brussels Sprouts with Blue Cheese Sauce

Delicious and so easy and quick. Steak was about 1.5 inches thick so started broiling the steak a few minutes before adding Brussel sprouts as I didn't want them to burn. Steak took about 12-13 min to achieve Med Rare. Sprouts come out crispy/tender and are delicious. The blue cheese sauce is a nice touch.

Re:Cider-Glazed Chicken Thighs

Super easy and delicious! I just placed on a baking sheet (no rack) and added some cider as mentioned in previous post. Took about 30-35 min but turned out super tasty and juicy. Even my kids loved it!! So easy! Served it with roasted sweet potatoes and caramelized shallots and salad. Yum!

Re:Grilled Chicken and Potatoes with Tomato and Cucumber Salad

Absolutely delicious! Will make again and again. I did an "indoor" version since it was raining. Tossed new baby potatoes in the dressing and roasted at 375 degrees for 40 min. "Grilled" the chicken breasts on a grill pan: med-high, 4 min one side, 2 min other side and then finished off in 350 degree oven for 20 min (just transferred the grill pan to oven). Used anchovy paste which worked fine for dressing. Herb blend: fresh dill, basil, cilantro, and chives. Was easy and wonderful.

Re:Campanelle with Sausage & Leeks

Light and vey simple to make. The leeks give it a nice subtle flavor. I did not find it too salty at all and added about 1/4 cup of pasta water and an extra pat of butter at the end.

Re:Buttermilk Mashed Potatoes

Perfect potatoes every time! This is my go-to weeknight potatoes! For a milder garlic flavor take the garlic out of the boiling water half way through the cook time.

Re:Boston Lettuce Wedges with Mimosa Vinaigrette

Love this salad! The dressing is way too salty with 1 tsp salt. I used about 1/2 tsp and added some white wine vinegar to taste.

Re:White Wine Smashed Potatoes

Delicious! Love the flavor the wine added. Used a Sav Blanc. A 12 inch skillet will not hold 3 lbs of potatoes so use a larger skillet if you need to make the full recipe. I used a 12 inch and it held about 2 lbs. Also, the liquid cooked away quickly and despite continuously adding more water the potatoes browned up quite a bit. In the end it may have enhanced the flavor. while it didn't look as nice as the picture it was delicious and easy to make. will make again and add a cup of water at the start to prevent browning.

Re:Potatoes Mousseline

Great! I made the day before Thanksgiving (poured remaining butter on just before baking). Got rave reviews. Easy timesaver and delicious!
