Re:Pumpkin Stuffed with Everything Good

Wanted to make this for thanksgiving, but didn't have a pumpkin and the stores were closed. Had a butternut squash though, so decided to peel & dice the butternut and mix with all of the filling ingredients in a casserole instead. Added a bit of extra cream, and also mixed in some leftover egg wash from the apple pie - also added a bit of diced apple to the mix. Turned out deliciously - many compliments - guests said best squash ever! Will definitely make this one again.

Re:Chocolate Stout Cake

Deliciously moist chocolaty goodness. So many compliments both on how the cake looks and tastes. I only made 2/3 of the glaze recipe (4oz chocolate & 1/2 cup cream) and found it to be more than enough.

Re:Yogurt Cake with Chocolate Ganache Frosting

My rating is based on my variation on this recipe, as I haven't actually tried it as above. But what I did turned out fantastic. I substituted the plain yoghurt for raspberry yoghurt - I had some in the fridge I wanted to use up, added 3/4 cup mini chocolate chips, omitted the frosting altogether and made as cupcakes (with baking time adjusted to 30 mins). Made 18 delicious little snack cakes - perfect for lunches. They were adequately sweet as is with no need for frosting. The raspberry yoghurt added an underlying fruitiness that was nice, and the mini chips gave a nice little bit of chocolate.

Re:Doughnut Muffins

OH. MY. GOD! These are SOOO good. Very dangerous to have around...Next time will do as mini-muffins - better size for snacking. My husband wants me to do some rolled in icing sugar next time instead of the cinnamon/sugar mixture as he loves the powdered doughnuts. Will post how that turns out.

Re:Braised Stuffed Endive

A nice different dish and nowhere near as involved as I thought it might be from the warning at the top of the recipe. Did find the filling a tad on the bland side though and added a quarter cup of additional parmesan cheese and about 2 tbsp of lemon juice to spice it up a bit before stuffing. Very pretty when plated.
