made this so often i can't count.. sub pine nuts or almonds if you like! Amazing! Hubby had heart surgery and we make lots of vegetarian type food since... served with home baked bread, home grown tomatoes, basil, plus red onion and the neighbors avocado. Dinner in 15 min!

Re:Shredded Carrots with Jalapeño, Lime & Cilantro

Served with Panko Crusted Baked Salmon and herb roasted baby potatoes for Mother's Day Dinner for 16. Doubled the recipe, used a mandolin instead of grater so the carrots had a fresh crunchy texture. Once again a hit even though it was the first time we made it! 2 jalie's and it just tasted fresh, not spicy hot!

We doubled the recipe and served it as a first course for our Mother's Day party - enough for 16 pers. I'd never made it before, but your recipes typically work out on the first try and this was fantastic! All our guests raved! Yippp-pea!PS. It is very good cold as well

Perfectly flavorful without the cheese and butter for a VEGAN option. Served w/ dandelion greens salad - wow! A gentle reheat the next day - awesome lunch. (I added some parmesan cheese). And any small noodle shape that cradles the pasta works.

My husband made this - although prep heavy ( as any new recipe tends to be ) it was absolutely worth it! Hats off to you for supplying vegan options. We made the veggie one as well - super delicious party food - made a little pork roast on the side for the carnivorous ones in the family....

AMAZING! For a vegan dish, simply forego the yogurt. Substitute any nuts you have in the pantry.Serve w/ brown rice and for the carnivours, make a little chicken marbella to go along...(made this 3 times already)

A Family favorite since 2009! For an added Scandinavian kick, we double all the spices ( per my Swedish grandmother's suggestion ) and serve it w/ unsweetened whipped cream. We make it in a pie pan - pretty at parties!

Re:Maple-Thyme Roast Chicken

A family favorite since it was first published! Make sure to use real maple syrup - the result is not so good with breakfast syrups.... And we double the fresh thyme from the garden. Served with Trader Joe's "Brown Rice Medley," and a salad, this is QUICK on a weeknight and great for leftover lunch.
