Re:Penne Rigate with Olives, Roasted Peppers, and Tuna

a very good recipe, however, the recipe doesn't call for what type of tuna to purchase. Solid core or chunk would have been better than what I got which was regular tuna. I used the Kalamata olives which worked well. This is a good recipe for mid-week cooking. I already bought some solid core tuna to do it again.

Re:Sausage, Potato, and Fennel Chowder

We used the spicy Italian sausage as well and the family loved it. However, as written the recipe doesn't call for the sausage fat to be removed and I really thought it made the chowder rather heavy. I'll be adding this recipe to my book, but with a note to remove at least half the fat after sauteing the sausage.

My family and I enjoyed this recipe very much. I used Vadalia onions which are in season this time of year and it paired very nicely with the sweet cherries.

Re:Cranberry-Orange Muffins

These muffins are absolutely the best. I made three batches in 6 days. The only thing I did different was to use paper cupcake liners. It was much easier getting the muffins out, and nobody seemed to mind having to unwrap the muffin. I'd be willing to bet other muffins could be made with the basic recipe.
