Re:Chicken Soup with Lime and Hominy

This was a great weeknight meal. It was delicious, healthy and fast. The Ajiaco Soup on this site is out of this world, but takes a long time. This is a nice substitute, esp if you add the avocado, tortilla chips and cilantro. I didn't have Mexican oregano and used regular, it was still great.

Re:Basic Roasted Cauliflower

YUMMY! I didn't have a go to cauliflower recipe before this and now I make it all the time. People who didn't think they liked cauliflower love it and ask how I made it, even my 4 year olds friends like it. Whenever I stray and try a different one, my family may compliment it....but always say they like this best. Plus, it is easy and hard to mess up unless you completely forget it is in the oven.

Re:Spicy Carrots with Jalapeño & Roasted Red Pepper

This was a delicious addition to a dinner party. I added 1/2 an extra jalepeno and seeded half. Next time I will leave all the seeds and maybe add more, but we like it spicy. I also shopped the carrots smaller, just seemed more practical to make them bite size. It was great, unusual, very in season and got a lot of compliments. I would definitely make it again.

I made these as full size burgers and served on greens with gazpacho on the side. I will definitely make as an appetizer, as written, but it sounded so good I just had to make it. Glad I did, great summer meal! I got four burgers out of it.

I make this frequently for holidays and family dinners, always to great reviews. It is delicious served at any temperature so it is a great dish to bring or just to have done early. The tarragon makes it.
