Re: Italian-Approved Pressure Cooker Risotto

Make sure that you have the right ratio of liquid to rice and when you add the liquid, scrape the bottom to remove any toasted rice that might have stuck there. Finally, once your pressure cooker reaches pressure turn down the heat as far as it will go while still maintaining pressure.

Re: Beans under pressure

Jennifer,

Thank you for covering pressure cookers in your February and March issues! However, I see that your recipes (and testing) only cover boiling in the pressure cooker, when there are so many other things that pressure cookers can do better and more quickly.

You can steam almost any vegetable in 5 minutes or less!

In a pressure cooker you can:

-Bain Marie (oh, you've got to try cheesecakes in there!)
-Boil
-Brown
-Braise
-One-pot-meal
-Reduce
-Roast
-Steam
-Stew

These techniques can be combined with accessories to great effect!

Thank you again for covering this under-represented and useful cooking tool! And I hope you consider writing an article with more information on it!

Thanks,

Laura
