Re:Seared Scallops with Golden Shallot & Grapefruit Sauce

The scallops & sauce tasted great and the scallops seared perfectly. I used champagne vinegar in place of white wine vinegar and it was a good complement to the flavor of the sauce. The sauce itself contained a little too much oil and needed to be reduced somewhat as it was a little thin.

Re:Mixed-Berry Jalousie

This got rave reviews at a suppper club I made it for. Using the turbinado sugar on top rather than real sugar makes a big difference.

Re:Buttermilk Country Fried Chicken with Cucumber Salad

The buttermilk tenderizes the chicken. This comes out great! An easy weeknight dish. I made a cream gravy from the pan drippings and served with steamed rice and the cucumber salad. My boyfriend was in heaven!

Re:Kung Pao Chicken

A great week night staple - even my kids love it. Be sure to have everything chopped and ready to go before you start cooking. I sometimes add water chestnuts or bamboo shoots and I always use more celery than called for.
