Re:Pork with Rice Noodles, Scallions, and Chile

The Larb recipe my Godmother gave me years ago is a much-requested dish by friends and family. This was good, but I felt like it was missing something. But I think that I was comparing it to a more traditional Larb (without the noodles) and to the recipe I usually make - which may or may not be fair. The only change I made was to add a large clove of garlic to the onion mixture. My husband thought it was good, good enough to make again. The fresh herbs gave it a nice, bright flavor.

Re:Baked Penne with Cauliflower and Cheese

I made this tonight and really liked it. It was rich tasting and comforting. It was hard to believe it was a healthy recipe! The cauliflower puree was tasty even on its own. I may make it another time and see about serving it as a soup. My husband liked it as well, although thought there should have been more black pepper.The only ingredient change I made was to substitute the 2 oz. cheddar with 2% Velveta, as I needed to use it up. And I made it in an 11x17" pan, as I wasn't sure it would fit into the 8x8".Update: Like others, I wondered how the cauliflower, onion, and garlic puree would taste as soup. I was looking for a cauliflower soup recipe, and thought - why not try this? I did and it was wonderful. I poured the whole 2 cups of milk into the veggies to make it easier to puree them. I added a bit of extra cheese and it was perfect. It's now my go-to cheesy cauliflower soup recipe.

Re:Cardamom Shortbread Cookies

These are wonderful. I made them for my wedding as favors, and everyone raved about them. The cardamom adds just the right hint of spice to balance the shortbread. They are so easy to make and also freeze well.

Re:Peppermint Brownies

These brownies are wonderful. In fact, I'm making a second batch now for Halloween. I have a question for those who have made them - when I added the peppermint extract, my eggs slightly curdled. I was so surprised I threw out the first 4 eggs, and started a second set of eggs only to have it happen again. I've never had that happen before. Any idea why?
