A special dessert for your holiday table! We make this every year for Thansksgiving and it is always a crowd pleaser. The only challenge is cutting the quince, but is worth it!

Re:Roasted Filet of Beef with Whole-Grain Mustard & Herb Crust

We have been roasting our beef tenderloin this way ever since this issue came out. In fact we have given up barbecuing the tenderloin because, done this way, it is always perfect. To accompany the roast we make a cognac mustard sauce. Always have rave reviews.

Re:Roasted Pork Loin with Maple-Mustard Crust

Absolutely outstanding, and as a previous reviewer said the real treat were the fennel and apples. I also used a Costco roast and found that it needed 20 min for the browning and a good 50 min to finish. We served it with baby roasted potatoes and a green salad. Can hardly wait to try the other recipes.

Excellent and so easy. The flavour combination of the bacon and the balsamic vinegar with the salmon is amazing. Used wild sockeye fillets without skin as this is what I had.Made it the second time for company and they left with the recipe.
