Re:Penne with Asparagus, Shiitake, and Pancetta

Excellent pasta dish and not that difficult to make. I cut the amount of salt to a scant 1 t. of kosher salt (which is less salty than table salt).

Re:Spring Vegetable & Potato Frittata

Absolutely delicious. Made this as written and will definitely make again. It's more substantial than the other frittatas I've made because of the fried potatoes. A keeper.

Re:Asparagus & Pancetta Frittata

Delicious and easy! In line with another reviewer's comments, I cut the salt to 1/8 t. (be sure to use kosher if you follow this--table salt is saltier).

Re:Rum-Raisin Blondies

An unusual bar cookie: like a cross between fruit cake and a blondie (brownie without chocolate). Like a fruit cake, it DEFINITELY tastes better after it sits: try a day or two later. Easy to make.

Re:Pea & Spinach Soup with Coconut Milk

Very tasty and quick and easy to make. My only thought would be to cut down on the amount of curry powder, which for me, overpowered the taste of the veggies. That said, we had leftover soup cold the next day with sour cream, and that might have been even better than serving it hot!

Re:Chocolate-Nut Zucchini Bread

Excellent zucchini bread made just as the recipe is written--moist with just a hint of chocolate. Will definitely make again!

Re:Gemelli with Cauliflower, Scallions & Green Olives

Like a tomato-less puttanesca. Loved this and would have used even more anchovies and garlic than the recipe calls for. Definitely a keeper.

Re:Triple-Orange Pecan Biscotti

These are addictive. You'd never realize they have olive oil in them. I used a cup or slightly more of flour on my pastry cloth. It's really not hard to work the dough--it's just very soft. Will definitely make again and again.

Re:Bread Salad with Corn, Cherry Tomatoes & Basil

I don't care that croutons are not traditional in panzanella. This is an absolutely wonderful salad.

Re:Andalusian Gazpacho

This is our favorite gazpacho by far. We serve it with chopped jalapeno and white onion garnish.
