Re:Simple Butter-Rubbed Roast Turkey

I've made this turkey at least once a year since this issue came out. Always use an unmediated bird, always brine it. People often say it is the best turkey they have ever had. I omit the sage because I hate it. Sometimes it takes far less time than it should. Not sure why. Turning it is a bit of an ordeal so sometimes I don't do all the turns and it doesn't seem to make a difference. Always delicious. Love Fine Cooking.

This is my families favourite! Requested for pretty much every birthday. Amazing easy recipe. I usually put a little less sugar as we like it tart. I've probably made it 50 times over the years. After the first couple of times I stopped lining the pan. This worked much better. It always comes out as easy as pie and is less fussy. I usually use a glass 8" square pan but today am making a double recipe in a9" x13" metal pan. I'll post if it doesn't work out.

Re:Maple Apple Pancake

After reading the previous reviews I decided to double the recipe for my family of 3.5. I peeled the apples (I used two smaller ones). I doubled everything except for the maple syrup - I used less than 1/2 a cup. Still It was way to sweet for us. The recipe worked perfectly doubled. I cooked it in a 12" pan for the same amount of time. I will definitely make again but with only a tablespoon or two of maple syrup in a 2x recipe.
