My wife and I loved this dish! We subscribe to the Fine Cooking Make-It-Tonight series and when we saw this recipe in the group, we new we had to try it with all of the wonderful ingredients in the dish. Because we both enjoy bold flavors, we amped up the red pepper flakes. The fennel, onion, tomatoes and vermouth all came together swimmingly!

Quick and tasty. I added 1/4 teaspoon of hot smoked paprika to kick it up a notch. I couldn't get bay scallops so I bought sea scallops and cut them into smaller pieces.

This dish is an excellent variation on the classic Garlic Shrimp tapa. I made it as an appetizer for Christmas dinner and my children and our guests couldn't get enough of it. I plan to make it again for New Year's Eve.

Re:Spanish Potato Tortilla (Tortilla Española) Recipe

This is just one of those great, satisfying dishes that can be eaten any time of day. I like to add 1/4 to 1/2 teaspoon of sweet pimenton (smoked paprika) to give it even more of that authentic Spanish flavor.
