This was an incredibly easy and fast recipe that made the kitchen smell aromatic in the 30 minutes it took to make. The flavors did not disappoint. It was milder than expected until I realized the curry powder I used was pretty mild. I plan to include this recipe in my keeper file.

Re:Smoky Refried Bean Tostadas

This dish is so delicious just as written. The bean mixture is so tasty, I used a potato masher instead of a fork. This is definitely going in my Favorite Recipes folder.

Re:Chicken & Tortilla Soup

This recipe has earned a permanent place in my recipe box. The broth is so delicious when it's reduced down. I use Better Than Bouillon chicken base (comes in a jar) so that I can easily double or quadruple the recipe. I don't like wasting so much oil for frying the tortillas, so I usually toss the tortilla strips with several teaspoons of vegetable oil and place them in my toaster oven on broil for 3-5 minutes until lightly browned on the edges.

Re:Tandoori Chicken

Saw this recipe in a booklet titled Favorite Recipes from 10 years of Fine Cooking, so I knew it had to be a winner. Prepared this over a charcoal grill for some guests last night. Although I also prepared brown basmati rice, curried lentil soup ladled over the rice, and aloo palak (Indian potatoes and spinach), the Tandoori style chicken was the star of the show. I made it just as the recipe called for, but marinating the chicken pieces with the marinade in a one-gallon ziplock bag in the refrigerator for 6-8 hrs. My guests loved the flavor and commented how authentic everything tasted. Be careful not to overcook the chicken--it sits under foil for 10 minutes with the garnishes.

This recipe was listed in a printed collection of Favorite Recipes from 10 years of Fine Cooking, and I have to agree the rice is fabulous. I love pairing it with my red enchiladas for a colorful plate.

Re:Rigatoni with Summer Squash, Spicy Sausage & Goat Cheese

This is one of my favorite summer recipes when my zucchini plants are in full swing. It's important to follow the recipe in the proportions it recommends for the most perfect taste sensation. I once made the error of increasing the goat cheese or the spicy sausage because I didn't want to waste anything . . . big mistake. It tastes perfect just the way it's written!
