Re:Spice-Rubbed Roast Beef Tenderloin with Red Wine Sauce Recipe

I saw this come thru XMAS morning. We sort of forgot about dinner and I got intrigued. Found a Safeway, bought the LAST tenderloin they had, found a tuna steak for me, and came home to spend a great afternoon cooking! My husband said it was the best he had ever had! Had to use dried thyme because the market was out of fresh, but it was still outstanding!The tenderloin was just over 3 lbs, and my husband cut it into 3 roasts (I don't eat meat). If you do this with a smaller roast, such as we did, start checking the meat at 20 minutes. Oh - I used a Bogle Zin for the sauce.

Love this! Full of flavor, easy to make, hardly any work to it! I used a dry Sake, and I chose to use a smaller shrimp than the receipe called for. Will definitely make it again!

Re:Classic Baked Macaroni & Cheese

Outstanding recipe - but I did modify it. Used 12 oz of elbow macaroni, added 6 pieces of crumbled bacon, 1 minced jalapeno that I sauteed with the onion, and used Pepper Jack instead of Monterey Jack. Because I used the jalapeno, I did reduce the onion t 3/4 because the pepper was sooooo large. For the bread, I used 2 slices of bread that I threw in the Cuisinart to crumb. My husband eats meat, and I don't, so I separated the mixed mac and cheese before I added the bacon, and used two 1.5 liter baking dishes for his and mine. Oh - didn't add any salt because it's easier to add a little to taste while eating it. I don't eat salt at all, and mine was great! My husband loved the recipe and cleaned the plate! Now next time? I'm going to add minced garlic to the onion and jalapeno....
