Re:Carrot Cake with Mascarpone Frosting

The best carrot cake/frosting combo ever. I love cream cheese frosting but it can get overwhelming. This cake looks impressive and has an amazingly light texture and flavor. My guests looked at the 4 layers and said,"only half a piece for me!" They all went back to claim their second half.

Re:No-Bake Chocolate Mousse Pie

The perfect summer dessert. Surprisingly light and not too sweet. I even watched the video on how to make chocolate shards. This one is saved in the file.

Re:Cedar-Planked Salmon with Lemon-Pepper Rub and Horseradish-Chive Sauce

My local Costco had Copper River salmon and this was a fabulous recipe. I had a dinner for 9 so both filets were consumed. There was not a single bite left. I doubled the amount of the rub and the amount of the sauce. Everyone loved the fish and agreed that the sauce was critical to bringing all the flavors together. Total cooking time on the fish was about 25 minutes. Will definitely make it again.

"The best strawberry shortcake I have ever had", is exactly what one of my dinner guests said when I served this last weekend. There was not a single bite left. The shortcakes are unbelievably light and moist. I'm sure I will be making this again.

My definition of the perfect recipe....simple preparation and AMAZING results. This fits the bill. I made this recipe as an appetizer for a big Spanish themed dinner. I wanted something that could be done in advance and was kind of easy. The flavors were fantastic. I made a double recipe for 20 people and it was completely gone....and it was not the only appetizer I served.

Re:Almond-Crusted Chicken and Nectarine Salad with Buttermilk-Chive Dressing

I read the other reviews and am now wondering if my taste buds are off. The salad was beautiful, and we felt quite virtuous having a salad for dinner, but we found it to be really bland. The dressing was just kind of "eh" and the chicken lacked any real flavor as well. I usually love Fine Cooking recipes but I won't make this one again.
