One of my top three cooking shows, I love Steve Raichlen. I have his "How to Grill" and "The Barbecue Bible".

Being a newbie with a Big Green Egg, I'm looking forward to seeing Steve include more recipes using HIS BGE on his BBQ University show. I am also adding one accessory at a time and having so much fun. Just completed a setup using a three section cast-iron grill,(Ceramic Grill Store). Being able to remove one section to add lump and chips makes it so much easier.

Also, maybe he could address the pros and cons of using a "dry rub" verses a brine when doing smoked salmon; or, in my case, - Steelhead.
