Re:Mac and Cheese with Jalapeño and Scallions

I thought this turned out bland and one dimensional. It needs another layer of flavor, something to break the monotony. I thought it lacked greatly in salt content as well, so maybe adding parmesan in the cream mixture, or shredded on top of the crumb mixture and broiled shortly. Otherwise, maybe adding prosciutto or something might help. The creaminess was great, just needs more dimensions.

Amazing mac and cheese! I used 1/2 Cracker Barrel sharp cheddar, 1/4 Cracker Barrel vermont white and 1/4 gruyere. The onion roux really gives the mac and cheese good depth and breaks up the cheesy flavor perfectly. The recipe doesn't specify, but I used whole milk and I feel that it would have been too thing with anything else. Probably some of the best mac and cheese I've ever had!

Re:Double-Cheese Penne with Sausage & Hot Cherry Peppers

Delicious! I used mild italian chicken sausage, and sweet/hot red peppers instead of cherry peppers. It turned out amazing. Great flavor. Might be my favorite pasta dish now!
