Re:Classic Beef Wellington Recipe

I made this for Christmas Eve dinner. Took me three days to make all the components from scratch. I followed the recipe very closely and my beef was overcooked. Really irritating. We like rare to medium rare but mine was well done. If I do this again, I would definitely adjust the cooking time or perhaps follow the advice about freezing the meat and putting it directly into the oven. It tasted wonderful but it was a bit disappointing in the end.

Wonderful! I followed the advice about using less cream--it was a good choice. Extra cream definitely not needed. Will make this again.

Decent recipe. Lots of prep but the flavor was really not worth it. Probably will not try this again.

Definitely a fun recipe to make. Stunning presentation. I was disappointed in the taste, however. Next time, I will flavor the creme filling with almond extract or Grand Marnier or something. Sort of insipid taste. Also, the caramel, while beautiful to look at, is nearly impossible to eat. My guests were afraid they would loose fillings and possibly teeth!
