Re:Smoked Salmon, Goat Cheese, and Artichoke Quiche

I made this for a staff brunch, and all I can say, is wow! wow! wow! Everyone loved it. I used drained canned artichoke hearts instead of frozen, and the bit of vinegar added a nice touch.I also replaced half of the all purpose flour with whole-wheat pastry flour, which made the crust a bit more hearty, to complement the strong flavors of the filling.

Re:Grilled Steak Kebab Pitas with Ginger & Garlic Dressing

Very tasty! I didn't want chunks of beef, so I sliced a half-frozen flank steak, marinated in half the dressing for 3 hours, then grilled. Added chopped feta to the pitas, along with shaved cucumber slices.

It's a five with one caveat: 4 tsp is WAY too much salt! I only used half that, and they were still a bit on the salty side. Next time, I will only use 1 tsp. Otherwise, these are lovely, and are great in Ina Garten's roasted butternut squash salad.

Really enjoyed this salad. I added a dry rub to the steak before grilling, which gave it more intense flavor. I didn't have radishes, but added snap peas, a sprinkle of blue cheese and some toasted slivered almonds.

Re:Spinach and Artichoke Salad with Couscous Cakes and Feta

I made this for dinner last night. Lovely salad. I agree the dressing was a little sour, but I think I had more than the 2T of lemon juice. I also used quinoa instead of couscous. We loved the cakes, but next time I think I would add some of the feta (or blue cheese would be good, too) to the cakes as well, to kick up the flavor a notch. They were a tad bland. We'll definitely have this again.
