Re:French Onion Roast Chicken

Carmelized onions were wonderful, but chicken was undercooked on the bottom. I used a large chicken and had to extend the cooking time to about 75 minutes. Breast was slightly dry and thighs were still bright red at joints. Top skin was nice and crispy, but bottom skin was rubbery and very unappealing. Next time will try chicken in a rack above the onions. I continued to roast onions while chicken was resting and they were divine. I used a roasting pan and onions were cooked perfectly.

Re:Smashed Red Potatoes with Basil & Parmesan

This has been a "go to" recipe for years. Everyone loves it. I even love it cold the next day - tempting me to make it as a cold potato salad side dish.

Re:Southern Fried Chicken

Delicious, moist, perfectly seasoned. This is the first time I've done a dry brine for fried chicken - usually soak in buttermilk all day. This is better and the only way I'll do fried chicken from now on. I have also recently found I prefer a dry brine for my turkey too. Tip for a cleaner kitchen - heat your pot of oil on your gas grill and cook outside! Less mess and no frying smell in your house!
