Re:Roast Chicken Thighs with Potatoes, Artichokes & Lemon

I have made this dish twice now and it was delicious both times!

Re:Fresh Tuna Burgers with Ginger & Cilantro

This was so... tasty! I loved it and will definitely make it again. I used pita for the bread and served it with the dipping sauce. It was delicious!

Re:Spice-Rubbed Tilapia with Tomatillo, Black Bean & Mango Salad

Very simple and flavorful. I will definitely make this again... maybe even try it with chicken. A couple of things: Go easy on the spices. If you put it on too thick you can end up with clumps of chili powder and it is a little overwhelming. It was better when lightly dusted with the spice mix. You also have to be careful not to have the heat too high or you burn the spices. The salsa was very good. I have never used tomatillos before, but I enjoyed them in the salsa. I also added red tomato and fresh corn to it. Overall... I really enjoyed this dish. It is perfect for a light, fresh, supper.

Re:Golden Chicken, Corn & Orzo Soup

I enjoyed this recipe. Easy, quick and flavorful. I think it would also be good with carrots, peas, etc. in addition to the corn.

Re:Chicken with Marsala, Mushrooms & Gorgonzola

I have made this dish several times. It is simple, easy to make and flavorful. I do change it up a bit though. I use white wine since I generally have it on hand, and I also use a low fat cream.

Re:Beef & Black Bean Chili with Chipotle & Avocado

This chili is very good and very easy! I used ground turkey instead of beef and added fresh corn and other veggies. It is something I will make over and over again.

Re:Risotto with Corn, Tomatoes & Basil

I really enjoyed this dish. It is perfect for the summer! However, next time I will add 1 or 2 ears of corn instead of three. I used three this first time around and ended up with more corn than risotto!

Re:Penne with Asparagus, Olives & Parmigiano Breadcrumbs

I followed the recipe as written, but used spray oil to cut down on the calories. I found it to be a little bland. I added a squeeze of lemon juice and that was a huge improvement. If I made this again I would cut down on the amount of pasta and have more asparagus/olives/garlic.

Re:Pan-Seared Pork Chops with Apple-Ginger Chutney

The response was 50-50. I found it to be too sweet, my friends thought it was perfect... the cilantro definitely helps to balance the flavors... If I tried it again, I would maybe reduce the vinegar/sugar first and then add the apples, and I would definitely cut back on the sugar just a little... but that's me.

Re:Brown Sugar & Brandy Pear Turnovers

Delicious! My dinner guests loved them! I made the filling in advance, and after dinner, just wrapped the filling in the puff pastry and baked... I served with Vanilla ice cream. I will definitely make this again!
