Re:Chinese-Style Brussels Sprouts with Black Beans, Smoked Almonds, and Cilantro

This recipe was great, but there were a couple ingredients which were unavailable to me. I had to substitute for the XO sauce and fermented black beans, as they weren't readily available. I used garlic-chile sauce, and some thai seasoning paste instead, and it turned out great. I will use shredded brussels sprouts more often.

Re:Fig-Glazed Pecan-Stuffed Pork Tenderloin

Great recipe, but the filling was a bit too mushy. When you cut into the pork, the filling tends to come squishing out the sides. However, the fig glaze is absolutely out of this world! We had glaze left over and used it on beef the next night. My family loved the pork and the glaze!

Re:Vanilla Marshmallows

These are delicious! If I made them again, I'd make a flavor besides vanilla. For all the effort, they taste almost identical to store bought, but better. One lesson I learned; when removing the "sheet" of marshmallow from the pan, onto parchment, you need to coat the top with powdered sugar, or after a couple of minutes, it it pretty much glued to the parchment. Otherwise, pretty simple recipe, and really yummy. I was dreading trying the recipe, as every time I've attempted candy in the past, I screw it up! Not this time, I would make this again!
