Cabbage and Apple Slaw

This quick slaw retains the cabbage’s crunch, while apples lend a touch of sweetness. Try it with Smoky Pork Burgers with Grilled Sweet Onion.


  • 1/4 cup walnut oil
  • 2 Tbs. red wine vinegar
  • 1 Tbs. brown sugar
  • 6 cups thinly sliced red cabbage
  • 2 apples, peeled and diced
  • 3/4 cup diced celery (about 3 ribs)
  • 3 scallions, thinly sliced, white and green parts separated
  • Kosher salt and freshly ground black pepper

  • In a small bowl, combine the oil, vinegar, and brown sugar.
  • In a large bowl, combine the cabbage, apples, celery, scallion whites, 1/2 tsp. salt, and 1/4 tsp. pepper. Toss with the vinaigrette and let sit for 20 minutes.
  • Top with the scallion greens and serve.
