We enjoyed this dish. I wish I had selected smaller (I used 10-12oz breasts) and higher quality (I used Perdue) chicken. I would make again with those adjustments.
Very tasty. I was certain the chicken wouldn't cook through and opened the first packet with trepidation; it was perfectly done. The celery and fresh bay leaf gave the dish a unique taste. I served it with mashed potatoes and green beans. I would make it again.
