These chocolate pecan cookies are one of the best-loved cookies in the bakery—chocolaty, buttery, melt-in-your-mouth wafers sandwiched around a mellow, creamy, brown butter pecan filling. A sandwich cookie, by nature, will take more effort to make than a drop cookie, because you have to make double the quantity of cookies, make the filling, let the cookies cool, then sandwich them together.
