The crunchy pecans in the Wedge Salad with Spicy Pecans & Blue Cheese recipe get their so-good-you-can’t-stop-eating-them flavor from Creole seasoning. This New Orleans spice mixture usually includes paprika, hot pepper, garlic, salt, oregano, and thyme, though recipes vary widely. It’s easy to make yourself, but we also like Tony Chachere’s Famous Creole Seasoning, available at the supermarket or at cajungrocer.com.


  • 1/4 cup paprika
  • 2 Tbs. kosher salt
  • 1-1/2 tsp. freshly ground black pepper
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground cayenne
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried oregano
