Pineapple Dipping Sauce

Yield: Yields about 1-1/2 cups.

Ingredients

  • 1 cup finely chopped fresh pineapple or 1 can (8 ounces) crushed pineapple with juice
  • 1 Tbs. granulated sugar
  • Juice of 1 lime (to yield a scant 1/4 cup)
  • 1/4 tsp. kosher salt
  • 4 fresh bird or serrano chiles, cored, seeded, and minced
  • 1 shallot, slivered
