This lunchbox-friendly treat (shown here with Marcona Almond Streusel) is like a fruit crisp in bar-cookie form. Try it with other jam flavors, if you like.

  • Position a rack in the center of the oven and heat to 350°F. Line the bottom of an 8-inch square baking pan with parchment. Lightly coat the parchment and the sides of the pan with cooking spray.
  • Press 4 cups of the streusel into the baking pan. Spread the jam evenly over the streusel. Sprinkle the remaining streusel in an even layer on top.
  • Bake, rotating the pan about halfway through, until fragrant and the top is golden brown, 35 to 40 minutes. Let cool completely in the pan on a wire rack, then cut into 2-inch squares. Store in an airtight container for up to a week.
