Yield: Yields 2 cups.


  • 4 medium ripe tomatoes, cored, seeded, and finely diced   
  • 1/4 medium red onion, finely chopped
  • 2 jalapeño chiles, stemmed, seeded, and finely chopped
  • 1 bunch cilantro, chopped
  • 2 Tbs. freshly squeezed lime juice
  • 3/4 tsp. salt, more to taste
  • Pinch freshly ground black pepper


  • Combine all the ingredients, tossing well. Cover and store in the refrigerator no longer than a day.
