I received beets in my CSA every week and only knew how to roast them. Was looking for something different and found this recipe. OMG. So good! The only change I made was I used balsamic vinegar instead of the red wine vinegar. The onion were sweet and the balsamic tangy.....the beets and greens earthy and really beautiful. Definitely a keeper!
We just love this recipe. It's so easy and tastes delicious. I just bought fresh beets at our farm store and my husband is making this now. Yum!
