Kansas City Style Barbecue Sauce

Yields 2-1/4 cups, enough for 10 to 12 lb. of meat.

  • 1/3 cup packed dark brown sugar
  • 1/4 cup white vinegar, more to taste
  • 2 Tbs. Worcestershire sauce
  • 1 Tbs. prepared yellow mustard
  • 1 Tbs. chili powder
  • 11/2 tsp. freshly ground pepper
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground allspice
  • 1/4 tsp. cayenne
  • 1/8 tsp. ground mace
  • 2 Tbs. honey
  • 2 cups tomato ketchup

In a large, deep saucepan, combine all the ingredients. Set over medium heat, stirring well to dissolve the spices. Reduce the heat to low and simmer, uncovered, for 30 minutes, stirring occasionally. Watch carefully, as the sauce tends to spatter.

Brush on the sauce toward the end of grilling.
