Didn't like this at all. The marinade was too sweet, and with those cooking times the fish is overcooked, which I usually am good at NOT doing. Flaky fish is usually overcooked.
I haven't made it myself but I Know how it taste, because the marinade is almost exactly like my mother's. The reason I gave it 4 stars instead of 5 is just because I don't like mirin. I used to get mad at her when she used it. I would add dried mustard, omit mrin, and thin it with water. The same marinade is good for ribs. I like to vacuum pack and freeze.
To bayviewchef - There's no replacement for Miso, so what you made was not the variant of this recipe, but we do have similar dish in Japan to what you've made, when we marinade white fish in Japan with soy sauce, we usually use ginger and citrus.
Very good - and easy.
This will become a regular. Note - I had a similar recipe for a glaze for Nasu (eggplant with Miso Glaze) - and I'll have to try the two togehter. That said - I can't resist commenting on bayviewchef's review. What were you thinking? Why would you review a recipe you DIDN'T make?
Well not a fair review, but will tell you my experience with rating it the way I made it. I could not get miso, so I googled how to replace it, which they said you can't but add salt to soy sauce.....I did not have miran wine so I googled that and it said use white wine with sugar. The marinade tasted awesome but I don't think it had the depth the true recipe would have had. I made it for friends without telling them the changes and they thought it was great. I'm extremely critical so keep that in mind. I'll try it again exactly when I have the ingredients. One person who knew it was a test said they thought ginger would be a nice addition and I agree.
I just made this tonight and it was so easy to make....left the fish in the refrig to marinate for about an hour. Followed directions and it turned out DELICIOUS. The fish was flaky and the sauce was extremely good. (Miso Paste is found in the Asian markets like Ranch 99 and it is in the refrigeration section.)
Yummy! Will definitely make it again. Enjoy!
