The panna cotta was delicious, not too sweet at all.
We infused the cream mixture with whole cinnamon, vanilla bean, and fresh ginger rather than the dried ground spices. The only issue and why I knocked a star off is that 2 Tbs. vinegar is way too much for that sauce. I like the idea of adding some acid to cut the sweetness, but the vinegar taste and especially smell overwhelmed everything else. We scrapped the sauce for most of it. Next time I would probably reduce the vinegar to maybe 2 tsp, or use lemon juice instead.
I've never made a panna cotta before either, but I thought this was delicious! I mean, REALLY delicious, especially with the apple cider sauce. The flavor of the panna cotta was lovely and complex, and yes, rich, but in a good way, in my opinion. Ultimately, I thought it was quite light and silky in texture. It wasn't overly sweet; the sweetness was provided by the sauce, which also had a nice tart kick courtesy of the apple cider vinegar. It was also relatively easy to make. I thought that all the straining would be too fussy, but after seeing what I strained out, it was absolutely necessary in order to make such an elegant dessert. Sensational!
Amazing recipe. We did not find it sweet at all. Everyone loved it and thought it was an excellent light and tasty dessert with perfect spices. Perfect after a heavy meal. It was not complex to make and could be made ahead of time.
I've never made a Panna Cotta before but I'm pretty sure I did everything right. My 2 star review is because it was so incredibly sweet and rich that no one wanted to eat it! It looked very pretty like the picture but while I like creamy and I like sweet this didn't do it for me or my family. The Panna Cotta did have nice flavors though but perhaps more milk than cream would've made a difference
