Summer Peach Cooler

These nonalcoholic cocktails of seltzer and peach purée are a perfect use for great in-season peaches, with their syrupy juice and jasmine-like aroma.
1 lb. ripe peaches, peeled and pitted, plus fresh peach slices for garnish
1/4 cup lime juice (from about 3 limes)
1 tsp. sugar, plus more to taste
3/4 tsp. kosher salt
About 1-1/4 quarts seltzer water
Put the peaches in a food processor or blender with the lime juice, sugar, and salt, and process to a very smooth purée.
For each drink, pour 6 oz. (3/4 cup) seltzer water over ice into a highball glass. With a bar spoon, stir in 3 Tbs. of the peach purée. Garnish with a peach slice.
