6/9/2012Love this!! Excellent flavors. Makes a nice dinner for a change of pace. This requires a lot of prep work but it comes together quickly once everything is ready to go. I also get less than 6 servings from this so plan accordingly.

10/2/2011This is a wonderful dish! Flavors are spot on and it's the perfect breakfast showstopper. The only thing I would say is the prep time is quite laborious with all the chopping. I made the hash and the mayo the night before to save time so that all I had to do was heat up the hash the next morning. Also, the recipe itself doesn't make a lot of hash once everything is cooked down, so, I almost always double mine. I also think I might try adding some chorizo sausage to the hash in the future.

9/2/2010Greaet brunch dish if you have time to prepare it. My brother in law made this a few years ago over a long Xmas weekend when we had a lot of family gathered together up in the mountains. Most were skeptical of this as a breakfast dish and everyone wanted to know what the back up plan was! It took a while for him to prepare - a lot of chopping is involved for a breakfast item. At that time and for our location we had trouble locating all the ingredients. It was phenomenal. Everyone had seconds. As I fondly recall this dish from a couple years ago, I'm making it again this weekend for a brunch surprise for a gathering of friends over this long weekend holiday.

12/31/2009Really good. Great flavors with the spicy chiles and sweet potatoes. Didn't really feel like it was 6 servings though, unless you had very small servings. At our house it was more like 3-4 servings.
I did feel there was more oil than needed. I used the full amount, but next time will cut it back to 4T.

8/31/2009My son-in-law's special favorite. Lots of the ingredients are easy to make ahead (steam the sweet potatoes, cook onions and chiles) and I vary the chiles according to what I have on hand. I usually serve as a buffet dish with scrambled eggs rather than fried and haven't tried the mayo with it, but it is a great side. Works well with ham, too. Anne Gomes
