This is a flavorful way to eat your veggies. I used whole wheat rotini pasta and added yellow bell pepper and fresh diced tomatoes. I grilled the eggplant in my grilling pan and used feta cheese. We usually eat this salad as a main dish. This is a very easy and healthy option.
