The turkey did turn out tender and did brown but I think this recipe needs to be tweaked to resolve some problems. Roasting on a baking sheet, no mention of a rack or not resulted in a pool of drippings for the bird to sit in. As a consequence the bottom half of the bird was overly moist and the drippings didn't get a chance to carmelize in the bottom of the pan. Not sure if I would try again.
