Rack of pork—the loin including the rib bones—makes an excellent party roast when topped with a savory breadcrumb mixture that browns and crisps. It’s wonderful with Oven-Roasted Potatoes, which can roast in the oven right alongside the meat. Have your butcher “french” or scrape the bones clean.

i have made this last weekend and it was a true crowed pleaser! I have however 'marinated' or brined the meet over night. It was moist and delicious.
I am a very skilled cook. This roast time is WAY off..... it's been in the oven for 70 min and still at 120*. I really trust fine cooking and rely on their recipes often. This one is not a good one so far! Hopefully, it will taste great at 9:00!when we get to eat. Not happy!
